A half beef is the oldest and plainest way to buy beef. You buy half of one specific animal, tell the processor how you want it cut, and fill a freezer for months.

Everything in your freezer came from one animal off this ranch. Nothing is blended and nothing is substituted from another herd. Because animals differ, we quote you the take home weight for your specific animal before you pay anything.

The cut sheet is the part that matters
Two people can buy identical halves and take home very different boxes. Ask for thick ribeyes and you get fewer of them. Ask for more ground and the steak count drops. If you have never filled one out, we will walk you through it on the phone. It takes about ten minutes and it decides what you eat for the next six months.

How much meat is in a half beef?
It varies with the animal, but a half generally puts somewhere around 200 pounds of packaged beef in your freezer. We tell you the take home weight for your specific animal before you commit.
How much freezer space do I need for a half cow?
Plan on roughly one cubic foot for every 35 to 40 pounds, so a half beef wants a real chest freezer rather than the one over your fridge.
What is a cut sheet?
The form that tells the processor how to cut your animal. Steak thickness, how much goes to ground, roast sizes, whether you want bones and organs. It is the part most people do not know they control.
Can I split a half with someone?
Yes, people do it all the time. One person is the point of contact for the cut sheet and the payment, then you divide it up afterwards.
