Is your beef grass fed or grass finished?
Both. Nearly all cattle are grass fed for most of their lives, so that phrase alone means little. Ours are also grass finished, which means they stay on our pasture to the end rather than going to a feedlot to finish on grain.
Where does your beef come from?
One ranch outside Heber Springs, in Cleburne County, Arkansas. Every animal is born, raised and finished here. Nothing is bought in and nothing is blended with beef from another operation.
What breed are your cattle?
South Poll, a breed developed in the American South to finish well on grass in heat and humidity.
What is in the beef sticks?
Beef, red wine vinegar and Redmond sea salt. Three ingredients.
Where are the beef sticks made?
At a smokehouse in Letona, Arkansas, from beef raised on our own ranch.
How much meat is in a half beef?
Around 200 pounds packaged, though it varies by animal. We quote the take home weight for your specific animal before you commit to anything.
How much freezer space will I need?
Plan on about one cubic foot for every 35 to 40 pounds. A quarter needs roughly 3 cubic feet and a half wants 5 to 6.
What is a cut sheet and do I have to fill one out?
It is the form telling the processor how to cut your animal. Steak thickness, how much goes to ground, roast sizes, bones and organs. If you have never done one, we will walk you through it on the phone.
Can I come and see the cattle?
Yes, with a call first. It is a working ranch rather than a shop, so we need to pick a time.
Do you ship?
Call and ask. We would rather tell you honestly what we can do for your address than post a shipping promise we have not tested.
How do I know when beef is available?
Join the list. We finish a small number of animals at a time, so beef and sticks come in batches and the list hears first.
