How Long Does Beef Last in the Freezer?
Safe and good are two different questions, and only one of them has a date on it.
This is the question every new share buyer asks, usually about a week after the freezer fills up. The answer has two halves, and mixing them up is what causes the worry.
Safe is not the same as good
Beef held at zero degrees Fahrenheit is safe indefinitely. That is the USDA position and it does not change with time. Freezing at that temperature stops bacterial growth rather than slowing it, so a steak found at the back of a chest freezer three years later will not make anybody ill.
Quality is the other question. Over time, moisture migrates out of the meat and fat oxidizes, and the result is freezer burn and a flatter flavor. It is still safe. It is just not what you paid for.
How long each cut stays good

Ground beef has the shortest window because grinding exposes far more surface area to air. That is worth knowing when you fill out a cut sheet, because it is also the cut most people ask for the most of.
What actually shortens the window
- Air. Vacuum sealing beats butcher paper by a wide margin, and it is the single biggest factor.
- Temperature swings. A freezer opened twenty times a day cycles through partial thaws. A dedicated chest freezer holds far steadier than the one over your fridge.
- Slow freezing. Fast freezing makes smaller ice crystals, which do less damage to the muscle fibre.
How to think about it with a share
A half beef is roughly 200 pounds. A household eating beef four times a week at a pound and a half a meal works through about 300 pounds a year, so a half is comfortably inside every window above. A quarter is even easier.
The mistake is not buying too much beef. It is asking for 70% of the animal as ground, then finding it is the one cut with a three month clock on it.

Yes, if it has been held at zero degrees the whole time. It is safe. The quality will have dropped, particularly in ground beef, but it will not harm you.

Is freezer burned beef ruined?
Not ruined, just dry and flat in the burned area. Trim it off and use the rest, ideally in something braised.
